What do you make when you’re getting home from work at 8PM and you want to eat healthy? ???? Spinach Soup!!

Ingredients:

  • 1 lbs spinach leaves, 1 Vidalia onion
  • 1 large green zucchini, 1 tbsp olive oil
  • 1 tbsp “better than bouillon” fresh cilantro, pepper, water.

Directions: Steam spinach with a small amount of water in large pan until wilted. Let cool completely. Transfer to a blender. Add cilantro, water and bouillon. Blend until smooth. Heat olive oil in large stock pot. Add minced onions and chopped zucchini. Heat until softened. Add spinach mixture from blender. Add water until desired thickness. Add spices. It is starting to look amazing. Serve warm with some kind of protein if desired . I added some left over slow cooked shredded chicken for @coach_willie to enjoy in his soup. I ate mine with chopped hard boiled egg whites. So yummy!!???? You can make this delicious, nutritious soup in 20 minutes! Enjoy!
